COVER: A Western diet induced interferon-β (IFN-β), cholesterol 25-hydroxylase (CH25H),
and 25-hydroxycholesterol (25-OHC) in small intestine of mice. 25-OHC induces immune
cells to produce inflammatory cytokines. Adding a concentrate of transgenic tomatoes
expressing 6F peptide (Tg6F) to a Western diet partially ameliorated these changes,
as did ezetimibe. Using a novel method to combine Tg6F with ezetimibe essentially
prevented induction of IFN-β, CH25H, and 25-OHC. (See Mukherjee et al. p. 1636.)...Show more
